Four Ingredient Recipes- Meatball Pockets

I don’t know about you but Spring Break in my house is not all flowers and rainbows.
The girls fight, the door bell rings incessantly, there is Cheetos dust all over my house and I have no energy whatsoever.
So I look for things to keep the girls busy, their friends busy and those “things” usually involve cooking, in my house.
My girls love to eat.
Like it’s their job.
Like they are getting paid to do it.
Seriously.
So I focus most of my activities with the girls on their time off around baking or cooking.
Spring break is this week for my girls and this is a recipe we are gonna make together.
The best part?
Four ingredients.I first saw these wonderful morsels of goodness on Pinterest a few weeks ago but it led to a Tumblr page and no real instructions.

–  1 can Grands biscuits (any kind is fine)
– 2-3 pieces of string cheese
– spaghetti sauce
– frozen meatballs
spices: garlic powder and oregano
If you are making this for a big crowd, I would double or even triple this recipe.
Pre-heat your oven to 350.
Spray a cookie sheet with cooking spray.
Open the can of biscuits and separate them.
Then cut them in half (like half moons).
Cut up your string cheese into bite size pieces.
Then place the frozen meatball on the half-moon with the string cheese.

Place the other part of the cut up biscuit on top of the cheese and meatball and spread to cover.
Sprinkle some oregano and garlic powder on top.
I would even add some Parmesan!
Bake for 17-20 minutes and you will have this:

Serve with either marinara sauce or pizza sauce. This is so good, even your pickiest eater will devour these.

I lied.
My five-year old?
Wouldn’t touch this.
With a ten foot pole.
I see people all over the web feeding their kids edamame, carrot cake, gluten-free smoothies.
Mine?
Won’t eat a meatball, stuffed in a biscuit surrounded by cheese and covered with pizza sauce.
Dirt covered goldfish crackers?
Yes!
Boogers?
Sure!
An m & m candy found stuck in the crevices of the back seat?
Of course!
But the above?
No.
So I am with you if you have an eater like that.
My oldest loved this. We loved this.
The pre-schooler?
Ate a gogurt and some carrot sticks instead.

    I am actually going back and editing this post.
    Because I failed to mention, my five year old wouldnt touch it.
    So I have no idea what "kid friendly" means either.

    Gah. My kids did the same things. Drove me batty. How could they be related to me – I ate all the time growing up and most if not all that you sat before me…they get bigger and start cleaning out your pantry when teenagers, tho…(shudder)
    I would eat those biscuit thingies, yes I would.

    Okay, I will try these because I happen to have 3 out of the 4 ingredients! ANd even if I didn't, I would by tomorrow. Oh wait- did I say 4 ingredients? WHAT ABOUT THE SPICES?!?!?!?!?!? That's 6 right there, lady.

    These look really delicious and so simple. Question: have you ever tried them with other meats? Or just browned hamburger? I'm not much of a meatball girl, but these are calling to me! 🙂
