Dessert Quesadillas Because Stress

When I have a stressful week, I eat my feelings.

Which works well for you because that means I will end up making a recipe and sharing it.

One morning I was packing Ella’s lunch and made her sandwich on a flour tortilla instead of her usual bread to shake things up a bit.

I am one wild and crazy mom.

It was while I was spreading condiments (hate that word) on her tortilla that I had an idea: what if I spread peanut butter and jelly on a tortilla and fry it like a quesadilla?

THAT WOULD TAKE THIS CRAP WEEK TO A WHOLE NEW LEVEL.

I am sure this has probably been done and is pinned on Pinterest somewhere, but for the sake of this blog, let’s pretend I invented this!

Spread ’em

Because you know how my brain works, all I could think about while constructing, cooking and eating was that I wish my name rhymed with jelly. So I could create the coolest blog name in honor of my favorite foods (PB&J being at the top of that list).

Peanut Butter and Kelly needs to be a blog somewhere.

Or Peanut Butter and Smelly.

Or Peanut Butter and Deli.

Fold ’em

After you prep your quesadilla, heat some butter in a fry pan. Then after your pan has heated for a few minutes, add the tortillas.

I don’t know the exact amount of time you need for each side because I don’t time it and I am not a food blogger.

Just keep checking until it is brown, then flip.

Our grandma’s didn’t need a recipe, and neither do you.

Look at that peanut butter oozing out.

That is a thing of beauty.

So while I was frying up my quesadillas, I had another thought (besides Peanut Butter and Belly), what if we did peanut butter and chocolate chips?!?!?!

DID I JUST BLOW YOUR MIND?

I KNOW I JUST BLEW MINE!

I folded the above over and fried it up in the pan. What came out of that pan, was pure magic.

This was so good that I licked the plate and debated making more. It tastes like a Reeses Peanut Butter Cup married a S’more.

Only 100 times better.

I am so glad I invented this.

Just call me Peanut Butter and Nelly.

    Why have I never thought of this??? I’m sorry you’ve had stress (and just making school lunches is enough to stress me out–not having to do that any more is silver lining in the cloud of my babies leaving home), but I’m glad it has served the world. Sending you love and wishes for the stress to pass.

    Haha!! Iโ€™m going to do this for the kids. Me? Iโ€™ve overstuffed myself on those no bake chocolate peanut butter cookies this year. I dreamed that I weighed myself and I freaked at the number on the scale. Iโ€™m half tempted to weigh myself for real to see if itโ€™s close. But I know better than to fall for that crap. If I see the actual cringeworthy number Iโ€™d make a stack of dessert quesadillas and eat my feelings all day long.

      So I am taking a migraine preventative that has a side effect of weight gain. I was all HELLLLL TO THE NOOOO.
      Nevertheless, I need to watch my cookie eating.
      Which means I have more room for dessert quesadillas!
      Noooooo……

    I’m a peanut butter junkie so this is right up my alley. The whip cream touch is great and very inspiring. I might have to try pb and banana with a dollop of cream.
